Main things for me are time / cost / warranty.
The warranty should always be there.
A good detailer will also have insurance. So if your car is damaged or stolen in their care they will cover the costs.
Time / cost depend on what you are having done. Your car is unlikely to require a 4 stage detail twice a year! Although it depends on your usage and level of care you take looking after your car... where you park, how you wash it... the answer is likely to be no it doesn't require a $1000 detail twice a year.

Always go based on recommendation. So if your friends/family have had good experiences with a detailer and the price is reasonable then go with that detailer.
