Think you're missing the point.
07/2019.75 is the latest and only i-step available OTA. OP had the latest update available via that method.
11/2019.5x is the latest globally available i-step for the G05 and can only, currently, be obtained via a dealership visit or DIY ISTA programming.
The OTA updates are n-1 meaning they are one main branch version behind the latest available version. This is presumably to reduce risk when delivering updates remotely.
