I also think the inline 6 is the way to go for most people. I have the same engine in my 540i and it is just so satisfying in both the X5 and 540i.
The only BMW V8 i have driven was in a 2018 7 series that i was briefly thinking about trading in my 540i for but I changed my mind after the test drive. It was very hard to drive smoothly. It had too much torque. I felt like it just wanted to take off regardless of throttle pressure.
If you were shopping for an X7, i would say definitely get the V8 because the inline 6 struggles to move that beast around with the same ease as in the X5.
