Please get started on the "sides". Honestly, there is good food in Cali, but a lot of the "gastronomic" stuff is just BS.
In NY, there's a Chinese restaurant called Mr. Chow's. It's "high-end" Chinese. They "deconstruct" a bunch of traditional dishes. But it's pure BS. I made the mistake of taking a Chinese management team there for dinner. They were polite but ended up telling me later (in a polite way) that it's the worst Chinese they ever had in NY. The next time they visited, I made to sure to get down and dirty and take them to Grand Sichuan.
