Explaining away what looks like poor design or poor execution by saying it was needed to make the seats comfortable makes no sense to me. Smooth leather seating and comfort are not mutually exclusive, as other manufacturers seem to have managed it (and so has BMW in other products).
Were it a stylistic decision, every vehicle would look more or less the same and, more telling, BMW's promotional materials would clearly show it, perhaps even describe it in glowing terms.
Given that the problem is highly variable between X5s and is not present in the official photos, my theory is: just poor execution.
