Blueberry flan!
Another Bruno Albouze recipe.
Soft, creamy flan with incredible blueberry flavor in tender shortcrust pastry.
On a scale ranging from 1 to 10, the flavor is an 11.
Flan filling with blueberry purée (frozen blueberries, 10% sugar, lemon juice), eggs, heavy cream, butter, corn starch, sugar. Pre-baked shortcrust pastry shell. Topped with fresh blueberries glazed with blueberry jam.
