All I can say is...go with a color you want. Dont settle or you'll never be happy!
Bamboo is beautiful...I considered it also, but I dont think it goes well with a heavily modded car (and I assume yours will be). Don't get me wrong, it really is a gorgeous interior, but with a heavily modded exterior, to me it doesnt flow (its classy).
Black or Red interior would be #1 choice IMO.
