Yes, but only because if you're buying a BMW you should get all the stuff you want or think you'll ever use.

For example, on my 2015 M4 I got all of the safety bing-bongs which turned out to suck so I turned them all off and on my 2018 I optioned zero safety bing-bongs. I don't miss them as I'm a fairly active driver, check all my mirrors every 5 seconds or so and inventory what I see, always look behind me to reverse, always look over my shoulder to lane change and if I don't see someone I previously saw I try to find them before moving, I always have 2 hands on the wheel, I always manually shift, and I rarely get out of 4th gear. I know what's around me and the best defense is a good offense: nobody can hit me if I'm in front of them, so I always am

For the 2021 G05, BMW tech is significantly better than my 2018 so I'm getting all of the safety options (or more just all of the options I might possibly want) to try it, and also because I'm looking for a more chill SUV experience ... will that work for me? will the safety systems be as annoying as they were in 2015?

So, yeah, if you don't know for sure it's not worth it, it's worth it!

maybe with the side sensors, you could put a piece of wraps where the sensors are and check before spending $

No, no wrap on the sensors. In front is only down radar and camera at the back of front glass

Just to add this into this thread, a dealership's Virtual Genius X5 delivery (many other insightful videos on the site) - at 18:00 he covers all of the safety features more/less via explanation ... could be better, but still a nice overview:
