Is there a way to only have Augmented Reality show when approaching turns, instead of just being on 100%?

Yes,

Dont select AR in Cluster - otherwise it will be on all the time.

Next decide where you want it to popup. Either in cluster or control display.

There is a setting in ID8.5 to select where you want the AR popup to be displayed. Select your choice. None, cluster or control display

Depending on what you selected above, you then must be in navigation/map view in cluster or control display for AR to pop up when there is a upcoming turn.

Dumb question… by “control display” you mean the main iDrive screen I assume?

+1 - perfect summary. You can also change it from the main map screen by going settings - guidance - augmented reality.

Yea, but that will only be selectable if it was showing a current turn. You'll see that setting disappear the moment there is no longer a current turn. Its a bit odd ...
