Good lord, why can't BMW dealers stock X5s with black interiors?? My local dealer (BMW of Alexandria) has 7 X5e's, one has black interior.

I don't believe that at all. Dealers probably order them because it looks more luxury and has more contrast. Can't imagine most people going to a dealership thinking "I want a really light color interior in my family SUV". But they probably don't want to order and wait, so they buy the one on the lot.

I have light grey in my E90 and it is a huge pain to keep clean.

I like the look of the light colors, the contrast is appealing - but the risk of wear, tear, and dirtiness...I'd pass.

When I was looking for my 45e I found many black on black available it was also the same with some other brands I was considering it seems that black on black just wasn’t selling as well. Personally I like black but I once had a black car and I was sick of keeping clean whites is much easier swirl marks are difficult to see.
