Long lasting paint protection - where in London?

I just ordered my M5 with a late Dec or early Jan delivery. Part of the deal is a dealer provided "paint seal and protect". I plan to get the car professionally treated for permanent paint protection with ceramic or better sealant.

1. Should I not let the dealer do their bit, as I don't know what kind of products they use and how will that affect the professional treatment I plan on getting later?

2. Can anyone guide me on the options I should be looking at, in terms of products and services? I want the gloss, wet look which minimizes daily cleaning and prevents water marks from rain or a casual hose wash.

3. Recommendations for the best place I can get this done in London. Please advise on what kind of cost to expect and longevity of the treatment.

Thanks!
