When would I want to disable traction control?

I have a 23 X5 e45. There's a button that disables traction control.

When would I want to do that?

Maybe when you are stuck on sand or snow something..? Never had used those buttons

When you know you're going to be flooring it and you don't want the car pulling power for minor slippage. One use case is launching it.

On snow when you want to send power to the wheels and don't want the system to cut power because of spinning tires.

basically, if you aren't planning to play around with the car then the only business use for turning it off is to allow the tires to spin when you are trying to get unstuck from snow, mud, sand, etc.

This is what the User's Manual says about it:
When DTC is activated, the vehicle has maximum
traction. Driving stability is limited during
acceleration and when driving in curves.
You may find it useful to briefly activate DTC in
the following situations:
▷ When driving in slush or on uncleared, snowcovered
roads.
▷ When driving off from deep snow or loose
ground.
▷ When driving with snow chains
